Teringin nak makan Asam Pedas Melaka tapi kadang jauh nak sampai ke sana kan? Tak perlu risau dah, Admin nak share satu resepi yang sangat simple dan anda boleh buat di rumah sahaja iaitu Asam Pedas Melaka. Memang padu rasa nya dengan kepekatan asam pedas itu sendiri.

Mesti terliur kan? Jom kita try.

Bahan-bahan:

Bahan A:

Kunyit hidup

Bawang merah

Bawang putih

Halia

Belacan melaka yang keping-keping

Cili kering

(Semua bahan di atas perlu dikisar sehingga halus supaya kuah nampak cantik. Sukatan boleh agak-agak sahaja. Kalau nak masak lebih, boleh banyakan bahan)

Bahan B:

Daun limau atau daun kesum, bunga kantan dan serai (Boleh pilih mengikut citarasa sendiri)

Air asam jawa

Bahan C (Untuk hiasan):

Bendi, tomato atau terung

Cara membuat:

  1. Mula-mula, tumis semua bahan-bahan yang di blend sampai pecah minyak. Masa ini minyak lebih sikit tidak apa nanti apabila sudah siap masak, minyak boleh dibuang, Tujuan minyak lebih supaya cili tersebut cukup masak dan sam pedas itu cantik sahaja berminyak. Kalau nak masukkan serai, boleh masukkan juga sekali.
  2. Kemudian, apabila sudah pecah minyak dan nampak cili tersebut sudah masak, boleh masukkan air asam jawa. Rahsia kuat menjadi pekat.
  3. Air asam jawa jangan banyak dan agak-agak sahaja. Asam pedas mesti masam sikit kalau tidak masam, tidak menjadi. Sewaktu  nak perahkan asam jawa itu, letak sedikit demi sedikit sehingga dapat rupa yang diinginkan sama ada pekat atau cair.
  4. Seterusnya, biarkan sampai mendidih dan selepas itu, boleh masukkan ikan.
  5. Kalau nak letak daun kesum dan bunga kantan atau daun limau masa ini, boleh letakkan sekali.
  6. Selepas itu, perasakan dengan garam dan perasa. Taknak letak gula pun tidak apa. Biar lagi sampai mendidih dan tengok ikan itu sudah masak.
  7. Akhir sekali, boleh masukkan hiasan sayur bendi atau tomato atau terung. Biarkan ia sekejap dan boleh dihidangkan.
