Chunky Salmon Otak Otak



500gm Salmon ( divide into 2 parts, ½ to be grounded  and ½ to be cut into small cubes) 

3 cmfresh turmeric  roots

5 nos shallots

3 nos garlic

3 cmginger

30g lemongrass

100g red chillies

1 pcstumeric leaf  – slice thinly/julienne 

3 pcskaffir lime leaves – slice thinly / julienne 

5 tbspThick coconut milk 

Salt to taste

Banana leaves


  1. Clean and cut the salmon into small pieces and divided into two parts. The other part to be cut into small cubes/dice

  2. Grounded one part, and  make sure to remove the tendons from the grounded salmon

  3. Grounded/ Pounded  the turmeric, shallots, garlic, ginger and red chillies into a paste

  4. In a separate mixing  bowl, add in the grounded salmon and the grounded spice paste.

  5. Stir well and add in the coconut milk and turmeric leaf and kaffir lime leaves

  6. Finally add in the salmon cut in cubes to the mixture and stir well, season with salt 

  7. Wrapped the salmon paste in banana leaf and grilled on a charcoal for 10 to 15 minutes. 

  8. Serve as appetizer
