Stollen Bread, An Authentic German Bread | iCookAsia

Sweet cakes and breads with candied fruits and nuts are the tradition of Christmas baking in many areas of the world. Known in Germany as Christstollen, this traditional Christmas stollen is a bread that is baked with dried fruits, candied citrus peel, nuts and spices. Ingredients:
125g Bread Flour
7g Instant Flour
108g Milk

125g Bread flour
5g Bread Improver
5g Malt Extract
8g Wheat Sour
83g Butter
4g Salt
33g Sugar
25 Marzipan
1g Vanilla Flavour
2g Stollen Spice
10g Egg Yolk
25g Full Cream Milk

285g Mixed Fruit
50g Almond Flake

Method:
1. Soak the Mixed Fruit with 30 g sugar syrup and soak overnight at room temperature. Prepare sponge and ferment for 3 hours.
2. To prepare the dough, place the remaining dry ingredients into the mixer. Add sponge, cold egg and Cold Milk .
3. Add butter gradually until dough is fully developed. Mix in the soaked and drained fruits and almond flake on slow speed for 1 minute until well blended.
4. Turn dough out onto flour dusted table. Divide into 3 pieces, each weighing 300gm. Round up the dough and rest it for 15 minutes.
5. Work them into a torpedo-like shape and divide in half with a rolling pin. Fold into 2 with the edge thicker than the centre.
6. Proof for 45 minutes at 37 °C.
7. Bake at 190 °C / until golden brown. Immediately brush with melted butter and coat with Snow Powder when it has cooled.
