Nasi Kerabu ni antara hidangan tradisi yang digemari ramai terutamanya daripada masyarakat pantai timur sendiri. Bahan yang diperlukan memang banyak atau orang kata ‘renyah’. Tetapi, hasilnya sangat berbaloi dan memuaskan. Yang teringin makan tu, boleh cuba resipi di bawah ini.

(Kuah Sambal Tumis)

Bahan bahan:

10 cili kering

3 ulas bawang merah

1 biji bawang besar

1/2 labu bawang putih

1/2 inci halia

200 gm santan pekat

3 batang serai (diketuk)

2 keping asam keping

1 1/2 sudu besar gula

2 sudu kecil garam bukit halus

2 sudu besar budu

Minyak masak (agak banyak)

Cara membuat:

  1. Kisar cili, bawang bawang dan halia.
  2. Tumis bahan kisar sehingga pecah minyak. Masukkan 1 1/2 cawan air dan santan. Sentiasa dikacau supaya santan tidak berketul. 
  3. Masukkan serai dan asam. Bila sudah mendidih, masukkan budu dan gula. Rasakan sebelum dimasukkan garam supaya tidak terlebih masin. Kacau sehingga pecah minyak dan bolehlah ditutup api. 

Nota: Kuah biar pekat dan masin sedikit. 

 

(Sambal Ikan)

Bahan bahan:

1 biji kelapa parut (digoreng api perlahan supaya tidak keperangan dan tumbuk kasar)

7 ekor ikan selayang (direbus, ambil isi dan tumbuk)

5 ulas bawang merah

5 batang serai

2 1/2 sudu besar gula

2 1/2 sudu kecil garam

Cara penyediaan:

  1. Tumbuk serai hingga hancur dan masukkan bawang merah. Tumbuk lagi dan masukkan garam dan gula secukup rasa. 
  2. Masukkan isi ikan yang telah ditumbuk dan kelapa goreng yang telah ditumbuk. Gaul rata rata. 

 

(Sambal Cili)

Bahan-bahan:

1/2 kg cili (dibasuh)

Garam

Gula

Belacan

Asam jawa

*Dikisar kesemuanya

Ulam ulaman

Kubis

Timun

Kacang panjang

Bunga kantan

*Dihiris halus dan sedia untuk dihidangkan. 

 

(Nasi )

Bahan-bahan:

5 1/2 pot beras

Air secukupnya

Pewarna biru (atau guna 15 kuntum bunga telang untuk nasi kerabu berwarna biru)

Serai diketuk

Daun limau purut

Caranya: Masak nasi menggunakan rice cooker seperti biasa 

 

(Resepi ayam madu bakar)

Bahan-bahan:

Ayam (rebus separuh masak)

Gula

Tos tiram

Madu

Sos cili

Cili kering

Bawang (yang sudah dikisar)

*Kuantiti agak-agak sahaja.

Bahan lain:

Keropok goreng

Telur masin

Bawang putih jeruk

Siap untuk dihidang! Anda jangan lupa untuk try masak di rumah, okay! 😉
