LEMON CHICKEN & MASHED POTATO
Ingredients:
2 Chicken Leg (bone in)
400g Russet Potatoes
5 tablespoon ADELA Vanaspati
3 cloves Garlic (minced)
100ml Milk
1 Lemon
1/2 teaspoon Thyme
Pinch of salt
Pinch of black pepper
Method:
1. Preheat oven to 180’C.
2. Marinate the chicken by melting 3 tablespoon ADELA Vanaspati and mix in garlic, lemon rind, lemon juice, salt, pepper and thyme. Rub the mixture onto the chicken and underneath the chicken skin.
3. Place the marinated chicken on a baking tray, slice a few lemons and place on top of the chicken.
4. Oven roast the chicken for 40 minutes – 1 hour until golden brown.
5. While waiting for the chicken to roast, prepare the mashed potatoes by peeling, cutting and boiling the potatoes. Once soft, mash the potatoes and add 2 tablespoon ADELA Vanaspati, salt, pepper and a dash of milk. Mix until well combined.
6. Serve the chicken with the mashed potato while its still hot!
