Ingredients
For the stew:
● 1 kg beef cubes (cut into 1 inch)
● 1 tsp seasalt
● 1 Holland onion
● 1 cm ginger
● 2 tsp tomato paste
● 1 tsp Worcestershire sauce
● 1/3 cup of cooking oil
● 1 tbsp brown sugar
● 2 stalks scallion
● 1 fresh thyme
● 2 S&p santan coconut milk
For Caribbean Green Sauce
● 1 stalk leek
● 1 stalk celery
● 2 Charleston pepper
● 4 pcs bird eye chilli
●1 cm ginger
●11 clove garlic
● ½ Holland onion
●1 cup cooking oil
● ¼ cup water
● A few fresh basil
● A few fresh thyme
● A few fresh parsley
● A few fresh coriander
● A pinch of sea salt
Garnishing
- Chopped coriander
Preparation:
Caribbean green sauce;
Mix all ingredients in a blender.
The stew;
- Season your washed beef with salt.
- Add to beef with chopped onion, ginger, tomato paste, worcestershire sauce, cooking oil, and Caribbean Green Sauce. Mix well and marinate for a couple hours.
- Heat pot on high heat, add brown sugar to caramelise. The sugar will turn frothy, immediately add the beef to the pot. Stir and cook until all liquid is evaporated.
- Toss in the scallions and fresh thyme then stir well. Add water, S&p santan coconut milk and bring to boil.
- Reduce to a simmer then cover the pot. Allow it to cook until the beef is tender. (About 45 minutes). Stir every 15-20 minutes.
- Remove the cover, stir the beef and bring the sauce to boil till it thickens.
- Garnish with chopped cilantro.
