Ingredients (for 4 pax)
1kg chicken breast – medium dice
1 onion
5 cloves garlic
2 inch ginger
4 stalk lemongrass
3 tsp dried shrimp (soak in water and
strained)
3 tbsp chili paste
2 tbsp oyster sauce
2 tsp Aji-no-moto
3 sticks curry leaves
4 pcs dried chilis
3 stalks kaffir lime leaves
300g corn flour
1 tsp Salt
1 tsp Pepper
3 tbsp Sugar
Method
• In a mixing bowl, mix the corn flour with AJI-NO-MOTO®, salt and pepper. Add the diced chicken and cover with flour
• Fry the chicken to lightly golden brown and strain. Set aside
• Heat up some oil in a pan and fry the blended items till fragrant
• Add chili paste and cook for 4 minutes
• Season with Aji-no-moto, some sugar, curry leaves and dried chili. Stir to combine.
• Add in the fried chicken and stir to coat with sauce for a few seconds before turning off the heat.
