Nasi liwet is a useful reminder that a rice dish can be an entire meal rather than a plain base. In Solo, Central Java, fragrant rice is cooked with coconut milk and aromatics, then served with chicken, egg and other sides. Indonesia’s tourism board includes it among the dishes to seek out in Solo. A home version can borrow its principle—rich, scented rice with contrasting accompaniments—without claiming that every vendor makes the same plate.

Let the rice carry the aroma

Cook washed rice with coconut milk diluted to the amount your rice needs, plus a little chicken stock or water. Add lemongrass and bay leaf, and season lightly. The rice should be tender and fragrant, not swimming in liquid. Indonesia Travel describes coconut milk, chicken broth, bay leaves and lemongrass as part of the dish’s flavour base. Measure the liquid for your particular rice and cooking method; a rice cooker and a covered pot evaporate at different rates.

The familiar Solo serving builds around the rice: chicken, egg, vegetables and a little chilli or sauce give different textures and intensity. Some plates include a creamy coconut topping called areh. These components can be prepared separately and assembled when serving, which keeps the rice distinct and lets guests choose their preferred balance.

Try the idea at home

For an approachable supper, cook the aromatic rice first, then serve it with cooked shredded chicken, a firm or thin omelette, vegetables and sambal on the side. A banana-leaf lining adds a market-table feel if available, but the rice and accompaniments matter more than the presentation. Keep cooked rice hot for serving or chill it promptly rather than leaving it at room temperature.
