MEE GORENG (FRIED NOODLES)
Ingredients:
1 pack of yellow noodles
200 gm boneless chicken breast, cut into 1/2-inch cubes (half cooked)
250 gm shrimp, peeled and deveined
1 cup bean sprouts, washed and rinsed
A bunch mustard greens, cut into small pieces
3-4 tbsp cooking oil
2 tbsp chili paste
3 tbsp oyster sauce
3 tbsp ketchup
3 tbsp dark soy sauce
4 nos shallots – slice thinly or minced
2nos garlic – slice thinly or minced
1 medium tomato, quartered
Salt to taste
Method:

Heat up cooking oil in a frying pan and sauté onion and garlic till fragrant then add in chili paste, stir until the ingredients are really cooked

When the color of the paste changes to dark red, then add the oyster sauce, ketchup and dark soy sauce and cooked well

Add chicken first and later add in the shrimp, if it is dry, add some water to make it soupy a little bit. Add in the mustard leaves. Season to taste.

Then add the noodles and stir well. Make sure the paste are coating the noodles Next, add in the bean sprouts. Stir-fry continuously for 3-5 minutes until noodles and beans sprout are thoroughly mixed. Do not overcook the beans sprouts.

Serve hot and garnish with deep fried onion and cut red chilies on top.
